A restaurant company has been fined £4,200 after a routine food hygiene inspection revealed numerous food hygiene offences.

A representative of Salvatore’s restaurant on Blackpool Road, Newton, pleaded guilty to 12 charges of breaching food hygiene regulations at Blackpool Magistrates’ Court on 27 January.

The court heard that environmental health officials from Fylde Council inspected the restaurant on 13 May 2009 and discovered significant quantities of food beyond its use-by date with some perishable foods unsuitable for consumption, as they were deemed to be unsafe.

Ingredients such as ham, chilli beef and pepperoni were being kept at temperatures above the required limits. Areas of the kitchen were also found to be dirty and badly maintained.

Magistrates also heard that the company had not provided adequate training for food handlers and there had been a general failure to assess food-safety hazards as required by law.

During the hearing, the serious public health risk was acknowledged by magistrates. The company was ordered to pay costs of £2,885 and the £15 victim surcharge.

Councillor Cheryl Little, Fylde Council portfolio holder for Social Wellbeing, said “This is a testament to the excellent work conducted by our environmental health staff in protecting the public.

“The message is that Fylde Council will not tolerate poor standards in food businesses.”
